WThis is an easy interpretation of a cocktail found on our latest menu. Designed as a large-volume pre-mixed that is loaded full of flavours of the festive period, which makes it ideal for hosting a holiday party. Reserve the remaining citrus syrup for morning drinks, puddings, or for additional servings of bikinis.

Serves 10 guests

To make the Clementine Cordial (makes 750ml)

300ml fresh clementine juice
200ml newly squeezed lemon juice
500g fine sugar

To make the Premix (makes 850ml, serving 10)

Making the Syrup: Place all the components into a pot, heat until it reaches a light boil, stirring until the sugar dissolves. Next, take off the stove and leave to cool entirely. Pour into an sterilised bottle, close it and refrigerate it chilled, it can be stored for about one month.

Preparing the Batch Mix: Combine every liquids into a sizeable container, let it rest for one hour, then pass it through preferably using muslin, making it fully clarified.

When ready to serve: Pour 85ml of your batch mix into your stirring glass packed with ice, gently stirring carefully for one minute to chill. Strain into a frosted cocktail glass or similar, garnish with some cranberries and complete it using a brief mist of the essential oil above the glass.
